I've caught Scyther, Pinsir, and Butterfree but others keep on winning with Metapods and Kakunas. When I went to catch a level 18 Metapod (highest level) I still lose. What determines the winner in a bug catching contest? I'm confused.

The one that's very important is the level of the Pokémon relative to the highest that can be found in the contest. So before the National Pokédex, the maximum value for Paras is17, but after the National Pokédex it is 34.

The Pokémon's IVs relative to the maximum (186) and HP relative to its maximum, as a percentage, are two determinants.

There is a rarity factor. Either 60 (Caterpie, Kakuna, Wurmple, Metapod, Weedle, Silcoon, Cascoon, or Kricketot), 80 (all Pokémon not mentioned), or 100 (Scyther or Pinsir)

What the above two said is basically how the contest is determined. Just to note, Shininess does not affect the outcome.

I'd just like to mention I caught a lvl 18 Pinsir but lost to two Paras and a damn Kakuna. Lame! lol

I've noticed that having full or near full HP is very important.

I'm pretty confused because I won the bug catching contest with a shiny Wurmple at a high level (I think either 20s or 30s) even though Wurmple's aren't that rare. So the rarity factor would be normal as would the other stats, wouldn't they? Also, if shininess doesn't matter, why did I win?
